Cowboy Caviar Couscous Salad
Ingredients
3/4 cup pearl couscous
1 garlic clove, grated
1/4 cup olive oil
2 tablespoons fresh lemon juice
1 1/2 teaspoons chili powder
1 orange bell pepper, diced
3 scallions, sliced on bias
1 can black beans, drained & rinsed
1 can corn, drained & rinsed
1 cup cherry tomatoes, halved
1/4 cup fresh cilantro, chopped
1/4 cup pickled jalapenos, minced
Salt & pepper… optional, season to taste
Steps
Cook couscous according to package directions. Then drain & rise with ice cold water.
In a large bowl, combine bell pepper, scallions, beans, corn, tomatoes, cilantro, and jalapenos. Once couscous is cooked, drained & rinsed, add.
Dressing: mix garlic, oil, lemon juice, and chili powder
Toss veggies with dressing & enjoy!
