Cowboy Caviar Couscous Salad

Ingredients

  • 3/4 cup pearl couscous

  • 1 garlic clove, grated

  • 1/4 cup olive oil

  • 2 tablespoons fresh lemon juice

  • 1 1/2 teaspoons chili powder

  • 1 orange bell pepper, diced

  • 3 scallions, sliced on bias

  • 1 can black beans, drained & rinsed

  • 1 can corn, drained & rinsed

  • 1 cup cherry tomatoes, halved

  • 1/4 cup fresh cilantro, chopped

  • 1/4 cup pickled jalapenos, minced

  • Salt & pepper… optional, season to taste

Steps

  1. Cook couscous according to package directions. Then drain & rise with ice cold water.

  2. In a large bowl, combine bell pepper, scallions, beans, corn, tomatoes, cilantro, and jalapenos. Once couscous is cooked, drained & rinsed, add.

  3. Dressing: mix garlic, oil, lemon juice, and chili powder

  4. Toss veggies with dressing & enjoy!
