Smoked Salmon Bruschetta

Ingredients

  • 1 large baguette

  • olive oil

  • 1/2 lemon zest

  • 1 tablespoon lemon juice

  • 8 oz. cream cheese, softened

  • 1/4 cup fresh dill, chopped… save a bit for garnish

  • 1/4 cup fresh chives, chopped

  • 8 oz. smoked salmon, rough chop or torn for easier bites

  • whole grain mustard

  • capers

  • 1 red onion, chopped… pictured above: I had pickled red onions on hand that I diced & used. They were a yummy substitution!

Steps

  1. Preheat oven 350°

  2. Cut bread on bias, drizzle with oil, bake 10-15 minutes, flip half way through

  3. Mix zest, lemon juice, cream cheese, dill, & chives. Use hand mixer on medium for about 2 minutes or until light and fluffy

  4. Top bread with cream cheese, salmon, onion, mustard, capers & dill
